Cheesy green garden bread. ( a kind of recipe).

I gathered a colander full of kale, beetroot leaves, mustard greens, spinach, rocket, parsley and rainbow chard. I wilted them, squeezed out all the excess water and cut them into teensy little pieces.

Then I filled a mixing bowl with;

2 cups of wholemeal flour
2 teaspoons of baking powder
a small pile of grated parmesan
a small pile of grated mozzarella
a small pile of grated vegetarian tasty cheese
a small pile of feta
a third of a cup of sliced olives
half a cup of milk

I let the mixer mix all the ingredients together until they were combined and I had a really wet dough.

I plopped the dough mixture onto a floury bench and rolled it into a log.
Then I cut the log into three even pieces and rolled them into long thin snakes.
I laid the snakes on an oven tray covered with baking paper.
I joined the three snakes together by pinching one end.
Then I plaited them and tucked the last pinched end under.

Then I popped the braided dough into a hot oven for about 45 minutes.
I pulled it out when the top and bottom were golden brown.

It smelt incredible. And it tasted good. Really, really good. But it's almost gone already and the girls aren't even home from school yet.

Oh well, I'll just have to make more.

I think this is the type of recipe you can modify to suit whatever is in season, or whatever's in the fridge. I am super-dooper excited to try it with tomatoes come summer.

I think that apart from the flour, the quantities are pretty forgiving. I think that it would be delish with crumbled feta over the top...or slathered with butter...or humus...or dunked in soup...And I think that this is going to be the best lunchbox and afternoon tea snack. And I think this is a great way to get your kids to eat their greens. Yum!

  10. You might be able to smell my three ginger loaf I have just made. I can smell your bread from here. I make something similar but with yeast. Roll to rectangle, spread with cheese and what ever you like. I eat little meat but am not vegetarian, so sometimes I use tuna,but hommus would be great. Roll up long side and slice like Swiss roll. Bake. Sprinkle with cheese. Eat hot with salad or veges for dinner or pack cold in lunch box.

  12. Looks delish!! I like to make tomato, spinach and feta 'damper'. I cook them in muffin trays and then the kids and I can just pop one in our lunch boxes!

  18. I *can* smell it from here! I'm not allowed in the kitchen any more. The man of the house insists on doing all the cooking and he's better at it so... {I do the cleaning, and I can actually cook as long as I follow a recipe!}

I have been searching all week for a homemade bread loaf with an extra something for a BBQ (please no wind) lunch with our friends this weekend and you roll out this bad boy, I'm over the moon with happiness.   21. Oh my this looks heavenly. I can smell it!!!
    I made simple damper this week with on,y cheese, as my garden is waiting for me to get it growing again. But I will next time make it like yours with all sorts of yummy. And it's so pretty plaited.
    Next week we're making damper with the kids at the school kids in the kitchen program. Do you mind if I use your recipe as its so much better than the one I was going to go with. And there's things in the school garden too. I was planning on making butter with the kids too - getting all those kids to work the cream. What better than fresh garden bread with homemade butter.
    Oh, yum and yum. I hope the girls got to taste some .....
